A couple of months ago, I pledged to join The Great Food Blogger Cookie Swap. I got in and was so excited to join my first ever cookie swap! Not only was it a great way to meet fellow food bloggers but we also donated towards the Childhood Cancer Foundation. I always love a good cause, especially this time of the year.
After thinking about what to make, I decided on Star Wars Gingerbread Cookies. It was perfect since Star Wars is coming up this month and the holidays are near. What’s more festive than Star Wars and Gingerbread combined? These awesome cookies, I tell ya!
I got the recipe from The Food Network and it’s really easy to make. I did leave out the shortening and compensated with more butter instead. I also used the Star Wars gingerbread cookie cutters from ThinkGeek.
3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon freshly milled black pepper
3/4 cup unsalted butter, at room temperature
1/2 cup packed light brown sugar
2/3 cup molasses
1 large egg
(Some powdered sugar for dusting)
Sift flour and other dry ingredients (except brown sugar) together in a mixing bowl. In another bowl, mix butter, sugar, egg and molasses. Once incorporated, add in the dry ingredients slowly to form a dough. Refrigerate for at least 3 hours.
Dust your table with powdered sugar and roll the chilled dough to about 1/4 in.
Using the cookie cutters, cut out and stamp the Star Wars characters. Bake the cookies at 350 degrees for about 8 minutes.
Let the cookies cool on the cooling rack.
You may ice your cookies but I actually like it not iced. It’s already delicious as it is!
