I confess, I’m still not over my vacation from Orlando. I doubt anyone will get over the fun that happens in Orlando. What I missed most about it was all the ice cream I could get! So for my post this week, I decided to create my own Monsters Inc. Ice Cream Sandwiches featuring Mike and Sulley. It was really easy to make and didn’t take me long to make everything.
For this recipe, you only need 4 INGREDIENTS (including food coloring). WHAT? Yes, you read that right!
You will need the following:
Pillsbury Sugar Cookies dough – tube
Your favorite Vanilla Ice Cream
1/2 Cup of Flour
Yellow Green and Teal food coloring (or whatever makes up those colors)
First, preheat the oven to 350 degrees. Then, we’ll need to add the 1/2 cup of flour to the sugar cookie dough. Knead until all of the flour is incorporated.
Cut the dough into two and add food coloring to each. Yellow green for Mike, Teal for Sulley.
Roll the dough and use the cookie cutters to make Mike’s outline. Punch the face stamp onto the dough before taking out the cookie cutter. Do the same for the Sulley cookies.
Tip: When laying out the Sulley Cookies, don’t forget to flip it over to match the top cookie. I made this mistake and realized it when I was assembling the cookies.
Bake the cookies for 8-10 minutes then let it cool.
Once the cookies are cool enough, take the cookie cutter and place it on top of a parchment/wax paper. This will make it easier for the ice cream to come off the surface.
Place the ice cream in the cookie cutter and assemble the sandwich as seen on the short video below. Place in the freezer overnight for the cookie to soften.
And there you have Mike and Sulley ice cream sandwiches! Perfect snack for you and other Monsters Inc. fans.
