I don’t think there’s any superhero more patriotic than Captain America. So for my 4th of July post, I decided to create a dessert in honor of our beloved Marvel character. After hours of trying to figure out what would be the best and simple dessert, I decided on cheesecake with raspberry topping. It’s so good that even THE HULK decided to crash the party.
First was to gather the ingredients you can easily find in your grocery store:
1 package Jell-o No Bake Cheesecake mix
Graham Cracker Crumbs (optional because the cheesecake package includes it)
Fresh Raspberries, 1 White Chocolate Bar
1 1/2 Cup Whole Milk, 1/2 Cup Granulated Sugar
Small Carton of Heavy Whipping Cream, 1 1/4 sticks of Unsalted Butter
Red and Blue Food Coloring, Small Star Cookie Cutter
Melt the butter and mix it with 2 cups of Graham Cracker Crumbs and 2 tbsp of sugar. Dissolve the red food coloring in 1 tbsp. of water and mix until the food coloring is incorporated well in the crumbs.
Place the crumbs in your desired pan and press them to make it stay in place. I used a springform pan for this recipe since I want the outer shell to be seen. Place the pan in the freezer.
In a small sauce pan, mix the raspberries with 2 tbsp. of sugar. Reduce the raspberries until it becomes like a syrup. Let it cool.
In a bowl, mix the Jell-o cheesecake mix with 1 1/2 cup of milk. Whisk until it thickens but not too thick.
Spoon the cheesecake batter on your graham cracker pie shells.
Place the whipping cream, 2 tbsp of sugar and a few drops of your blue food coloring in a mixing bowl. Put the mixer at medium-fast until it looks like the whipped cream on the picture below.
Place some of the cooled raspberry reduction onto the cheesecake and top with the whipped cream.
For the star, microwave the chocolate bar for about 10-15 seconds. Make sure that the star is not melted all the way through. If it melted, let it cool until it’s a bit firm to the touch. Using the star cookie cutter, cut out a star on the bar.
Place the star on top of the whipped cream and enjoy Captain America’s Cheesecake Shield.
